How To Cook: |

1. Cook the apple rings until nearly tender.

2. Wash the rice well, cook in briskly boiling water for 10 minutes with some lemon juice or rind added, then rinse, drain and allow drying.

3. Drain the apple rings, chop small and mix with the rice, raisins, peeled chopped tomato, parsley, salt and pepper.
|
4. Divide the mixture into 10 parts and put one portion on each slice of ham; roll up and skewer.
|
5. Place in a fireproof dish, pour some mustard sauce over, cover and heat through in the oven.
|
6. NOTE: To prevent the ham breaking when rolled, do not put it in a refrigerator.
