What You Need: |

Avocado
2 teaspoons butter
2 pints stock
1 teaspoon flour
˝ pint milk
Seasonings

How To Cook: |
|
|
1. Cream the butter and flour together until quite smooth, then stir in the milk slowly, cook until thickened, stirring all the time.
|
2. Add the stock and keep hot.
|
3. Mash the avocado smoothly and add to the stock, but do not allow boiling.
|
4. Adjust the seasoning and strain before serving.
