Baked Grapefruit Pudding
What You Need:
  • 2¼ cups grapefruit sections
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup brown sugar
  • 1 egg
  • 1½ cups flour
  • 1/3 cup milk
  • 4 tablespoons melted butter

  • How To Cook:
    1. Free the grapefruit sections of pips and pith and lay them in a buttered dish.

    2. Mix the sugar and 1 tablespoon each of flour and butter, and then sprinkle over the fruit.

    3. Sift the remaining flour, baking powder and salt, add the butter and mix well with a fork.

    4. Beat the egg and add milk to make ½ cup of liquid; add to the flour mixture.

    5. Turn out on to a floured board and knead lightly until smooth.

    6. Roll out ¼ inch thick and cut to fit the dish. Place on top of the grapefruit and bake in a hot oven (450°F) for 25 minutes.

    7. Turn upside down on to a hot dish to serve.

    To Serve: 4 - 6
