Braised Stuffed Cucumber
What You Need:
  • 2 long, thin cucumbers
  • 1 tablespoon soya sauce
  • ½ cup minced pork
  • 1 teaspoon salt
  • ½ cup dry breadcrumbs
  • ¼ teaspoon sugar
  • 1/8 teaspoon peeled and shredded ginger root, or ¼ teaspoon powdered ginger
  • ¼ teaspoon monosodium glutamate
  • 1 - 2 tablespoons cooking oil
  • 1 tablespoon red wine vinegar

  • How To Cook:
    1. Wash, peel and trim the cucumbers; cut across into slices about 1½ inches thick and hollow out the centre.

    2. Mix the pork with the remaining ingredients, except the oil, and pack into the cucumbers.

    3. Heat the oil in a saucepan, stand the stuffed cucumbers in the oil and cook gently until tinged with brown, then turn and brown the other end.

    4. Add ¼ cup water, cover, turn the heat low and continue cooking for 8-10 minutes longer.

    5. The cucumbers should be tender but not soft, and the pork done through.

    To Serve: 4 - 6
