Carpet - Bag Steak
What You Need:
  • 1˝ - 2 pound the very best rump or fillet steak (it must be at least 2 inches thick)
  • Dozen raw oysters
  • Mushrooms
  • Salt
  • Cayenne pepper
  • Olive oil or melted butter

  • How To Cook:
    1. Slit the steak through its thickness so that it opens like a book.

    2. Fill with a raw oysters taken from their shells, cover these, if desired, with finely sliced mushrooms and sprinkle with a very little salt and some cayenne pepper.

    3. Sew up with fine white string, so that neither the filling nor the juice can escape.

    4. Rub the steak over on both sides with olive oil or melted butter and grill under a quick flame for 5 or 6 minutes on each side.

    5. When the meat has browned, finish cooking in a hot oven (450°F) for a further 10 minutes or so-according to the extent of "rareness" desired.

    To Serve: 2 - 4
