Corroboree Curry Hot - Pot
What You Need:
  • 1 pound braising steak
  • ˝ pint stock
  • 2 onions
  • 1 tablespoon flour
  • 2 cooking apples
  • Salt
  • 2 tomatoes
  • Brown sugar
  • 1 tablespoon dripping
  • Parsley
  • 2 teaspoons curry powder
  • 3 hard-boiled eggs
  • 2 oz sultanas
  • 2 packets of potato crisps
  • 1 oz seeded raisins

  • How To Cook:
    1. Cut up the meat and slice the onions, apples and tomatoes.

    2. Heat the dripping in a pan, add the meat, onion and apple, and fry until golden brown.

    3. Add the tomatoes and curry powder and cook for a few minutes longer.

    4. Place the mixture in a casserole, add the dried fruit, and barely cover with stock.

    5. Lid the casserole and cook in a moderate oven (350°F) for 1˝ hours.

    6. Blend the flour with a little extra water and stir into the casserole.

    7. Season to taste with a little salt and brown sugar, garnish with parsley and sliced egg, surround the casserole with potato crisps, and serve at once.
