Lamingtons
This is a type of cake widely eaten in Australia, but unknown over here.

What You Need:
  • Madeira Cake
  • Cocoa
  • Cold water
  • Coconut
  • Whipped cream

  • How To Cook:
    1. Cut a Madeira cake that is several days old into neat pieces about ˝ inches thick.

    2. Dip each piece into a mixture of cocoa and cold water (unsweetened) or into half-set jelly, drain on a fork and toss immediately in desiccated coconut.

    3. Leave spread out on a plate until the coating has set.

    4. Decorate with whipped cream.
