What You Need: |

½ cup sugar
1 tablespoon butter
2 eggs, separated
1 tablespoon flour
1 cup milk
Juice and rind of 1 lemon

How To Cook: |
|
|
1. Mix the sugar and butter well.
|
2. Add the egg yolks, flour, milk, lemon juice and grated rind.
|
3. Beat the egg whites stiffly and fold into the mixture.
|
4. Cook in a soufflé dish in a baking tin of water in a slow oven (325°F) for ¾ hour.
|
5. The top should set as a very light sponge with a custard sauce underneath.
