Lomi Lomi Salmon
This dish together with sweet potato may be used on the same menu and called a "poi supper." If canned poi is available, it should be served also. The meal may be finished off with slices of fresh pineapple.

What You Need:
  • 1 pound salt salmon
  • 3 - 5 ripe tomatoes
  • Crushed ice
  • 1 large round onion or a bunch of green onions

  • How To Cook:
    1. Soak the salmon in water for a short time.

    2. If the salmon is very salty, repeat this process two or three times.

    3. Drain salmon and shred into very fine pieces and put in a basin, discarding all bones and skin.

    4. Cut up the tomatoes in fine pieces and add to the salmon.

    5. Do the same with the onion and then add crushed ice.

    6. Mix this with the hands.

    7. If green onions are used, be sure to use all the onion tops-the bits of green make this dish more attractive.

    8. The amount of crushed ice should be equal to the amount of the other ingredients.

    9. This is served while the ice is still solid.

    TIP:
        Canned salmon may be substituted if the salted variety is not available.
