Maori Kumara Pudding
(Roroi)
This recipe is perhaps the only Maori pudding known.

What You Need:
  • Some fresh kumaras or sweet potatoes
  • Sugar

  • How To Cook:
    1. Take kumaras or sweet potatoes, straight from the garden if possible, wash and then grate.

    2. Put in a shallow baking dish and sprinkle with sugar.

    3. Over the top spread some broad slices of sweet potato, to keep the mixture from hardening in the oven.

    4. Bake in a moderate oven (350°F) for 1 hour.

    5. When cooked, this is similar to a steamed pudding, and may be served with cream or other sauce or accompaniment.

    6. When cold, it may be sliced up like bread and spread with butter.
