South Seas Fish In Foil
What You Need:
  • 6 trout or any white fish (½ - ¾ lb.)
  • Juice of 1 lemon
  • ½ teaspoon ground ginger
  • 6 tablespoons melted butter
  • ½ pound fresh spinach leaves, washed
  • 2 teaspoons soy sauce

  • How To Cook:
    1. Clean and wash the fish. (If using frozen fish, thaw according to directions.)

    2. Stir the melted butter, soya sauce and lemon juice together and brush on to the fish, inside and out.

    3. Sprinkle the inside of each fish generously with the ginger and then dust lightly on top.

    4. Place a few spinach leaves on a square of aluminum foil, lay a seasoned serving of fish on spinach and place a few leaves on top; wrap in foil, turning the ends in and folding it securely.

    5. Place on a shallow baking tray and cook in a moderate oven (350°F) for 30-40 minutes. Bring to the table in the foil.

    6. If you prefer, wrap several pieces of spinach-covered fish in one large piece of foil and remove from the foil to a hot serving platter.

    TIP:
        The foil is used as a substitute for the large leaves of various tropical plants. The leaves or husks of sweet com could also be used.
