Apple Pie
What You Need:
  • 4 or 5 sour Canadian grown apples
  • 1 teaspoon nutmeg or cinnamon
  • 1 teaspoon butter
  • ½ cup sugar
  • ¾ teaspoon salt
  • 1 teaspoon lemon juice and a few gratings of lemon rind

    PASTRY
  • 1½ cups pastry flour
  • ¾ teaspoon salt
  • ¼ - ½ cup shortening
  • ¼ teaspoon baking powder
  • Iced water to make stiff dough

  • How To Cook:
    1. Mix and sift the dry ingredients; rub in half the shortening.

    2. Add the iced water and roll out the dough on a floured board.

    3. Put the remaining shortening on 2/3 of top in small pieces.

    4. Fold pastry, pat and roll out; repeat several times.

    5. Combine all the filling ingredients and place in a small earthenware baking dish, and then add hot water to prevent apples from burning.

    6. Cover closely and bake 3 hours in a slow oven (325°F) when apples will be a dark red color.

    7. Brown sugar may be used instead of white sugar, a little more being required.

    8. Cool and bake between two crusts of the pastry.
