Baked Halibut Fillets
What You Need:
  • 6 halibut fillets
  • 1 tablespoon fat
  • 1 teaspoon chopped onion
  • 2 tomatoes
  • 1 green pepper, sliced
  • Salt
  • Pepper
  • 1 small piece of bay leaf
  • Juice of 1 lemon
  • Hollandaise sauce

  • How To Cook:
    1. Melt the fat, add the onion and cook slowly until soft.

    2. Arrange the tomatoes, peeled and sliced thickly, in the bottom of a shallow baking dish.

    3. Overlap with slices of green pepper.

    4. Sprinkle with the onion and seasonings.

    5. Cover with the fish fillets; sprinkle with the lemon juice and seasoning and cover.

    6. Bake in a moderate oven (350°F) for 20-30 minutes until the fish is tender and flakes easily.

    7. Remove the cover, pour the hollandaise sauce over and brown under the grill.

    To Serve: 4 - 6
