Beef And Fruit Stew
(Carbonada Criolla)
What You Need:
  • 1 chopped onion
  • 1 sliced blanched carrot
  • 2 chopped cloves of garlic
  • Warm stock or water
  • 1 pound diced pumpkin
  • ˝ cup oil
  • ˝ cup peas
  • 1 pound stewing beef
  • 1 diced potato
  • 2 peeled tomatoes
  • 4 dried peaches or 2 fresh ones
  • Thyme
  • 4 oz butter
  • 1 peeled and chopped plum
  • 1 corn on the cob
  • 1 peeled and sliced apple

  • How To Cook:
    1. Saute the chopped onion and garlic in the oil; when brown, add the meat, cut into 1-inch cubes, the tomatoes and thyme and cook for a short time.

    2. Add the butter, corn, carrot and stock and cook for about 1 hour.

    3. Add the pumpkin, peas, potato, peaches, plum and apple, cover the saucepan and cook for another ˝ hour.

    To Serve: 4 - 6
