Date Bran Muffins
What You Need:
  • 3˝ oz sieved plain flour
  • 2 tablespoons soft shortening
  • ˝ teaspoon salt
  • 3 tablespoons caster sugar
  • 3 teaspoons baking powder
  • 1 beaten egg
  • 2 oz bran 4 oz chopped dates
  • ˝ pint less 3 tablespoons milk

  • How To Cook:
    1. Start heating the oven to moderately hot (400°F).

    2. Grease well about 12 2˝-inch muffin pan cups.

    3. Sieve the flour, salt, baking powder.

    4. Soak the bran in the milk for 5 minutes.

    5. Meanwhile, in a small bowl, beat the shortening and sugar until light, add the beaten egg, and stir until smooth.

    6. Add to the bran mixture and stir. Add the flour mixture and dates, stirring only until just mixed, no longer.

    7. Fill the muffin cups two-thirds full.

    8. Bake for 25 minutes, or until done.

    To Make: 12 muffins
