1. Slice the meat. Make a batter of the eggs, flour, mustard, oil, vinegar, salt and cayenne.

2. Soak the slices of meat in this batter for a few minutes, and then fry them in hot lard.
|
3. Pour the remaining batter into the hot milk or hot broth.
|
4. Add the butter and heat to make a sauce which is poured over the fried meat just before serving.
