How To Cook: |

1. Put a large piece of lean salt pork into a black iron pot.
|
2. Cover with cold water and boil for one hour.
|
3. Drain and add fresh water, boil again.
|
4. About half an hour before the pork is ready, add some peeled whole potatoes and dumplings the size of an egg.
|
5. Place these on top of the potatoes but take care the water does not boil over the dumplings or they will be heavy.
|
6. Boil for 20 minutes, or longer, or until the potatoes are cooked.
|
7. Serve with molasses.
