Honey Drops
What You Need:
  • 8 oz butter (or part butter and part homogenized cooking fat)
  • 4 tablespoons honey
  • 1 teaspoon vanilla
  • 14 oz plain flour
  • 1 teaspoon bicarbonate soda
  • 7 oz soft brown sugar of
  • 2 eggs

  • How To Cook:
    1. Mix the fat, soft brown sugar and eggs together thoroughly. Stir in the honey and vanilla.

    2. Sieve the flour and baking soda together and add to the mixture. Stir.

    3. Chill until firm, several hours or overnight.

    4. Roll dough into balls the size of walnuts. Place on an ungreased baking sheet.

    5. Heat oven to moderate (350°F). Bake for 10-12 minutes or until almost no imprint remains when touched lightly with the finger.

    6. When slightly cooled, put together in pairs with apricot or other jam.

    To Make: approximately 2-3 dozen pairs of cakes, depending on size
