How To Cook: |

1. Wipe the fillets with a damp cloth.
|
2. Sprinkle with 1 teaspoon of salt and place them in a buttered baking dish.
|
3. Mix the breadcrumbs, seasoning and remaining salt.
|
4. Heat the butter, lightly fry the onion and stir into the breadcrumbs.
|
5. Arrange the stuffing over the fish and cover.
|
6. Bake in a moderately hot oven (400°F), allowing 10 minutes per pound of fish.
|
7. Remove the cover after 10 minutes baking, to allow stuffing to brown.
|
8. NOTE: Poultry seasoning is the same as used in forcemeat stuffing, sage, thyme, etc.
