Minced Beef Stew
(Carbonado)

This is a delicious and unusual dish.
|
What You Need: |
|
|
1½ pound beef
2 oz butter
4 medium-sized onions, sliced
1 large tomato, peeled and sliced
1 teaspoon salt
¼ teaspoon pepper
¼ pint meat stock
2 pears, peeled and sliced
2 peaches, peeled and sliced
4 plums, peeled and sliced
4 medium-sized potatoes cut in ½-inch dice
2 oz seedless raisins

How To Cook: |

|
1. Mince the beef. Heat the butter in a casserole, fry the onions till brown; add the tomato and fry for 2 minutes.
|
2. Add the minced beef, stir well and brown for 2 minutes.
|
3. Add the salt, pepper and stock, cover and cook very gently for 1 hour.
|
4. Now add the fruit and potatoes and cook again till tender. Just before serving add raisins.
