Thick Corn Stew
(Locro De Chocio Desgranado)
What You Need:
  • 1 dozen heads corn on the cob or 2 tins whole corn
  • 1 little diced pumpkin
  • 1 chopped onion
  • 2 tablespoons dripping
  • ˝ pound stewing beef
  • 1 chopped green pepper
  • A little stock
  • 2 peeled tomatoes
  • 3 blanched carrots
  • Salt and pepper

  • How To Cook:
    1. Clean the corn on the cob and separate from the cob with a knife.

    2. Place in a saucepan, with the diced meat, a little stock, sliced carrots and diced pumpkin and cook until tender.

    3. Meanwhile saute the onion in the dripping, add the chopped green pepper, tomatoes, salt and pepper and cook for about 20 minutes.

    4. Pour this sauce over the meat.

    To Serve: 4 - 6
