How To Cook: |

1. Take 1 - 1½ pound of the inside of a sirloin of beef, or the same quantity of rump steak.

2. Cut off part of the fat, beat the meat until tender, and then cut it into small, thin slices.
|
3. Slice lamb's kidneys or veal kidney; beard oysters.
|
4. Mix with pepper, salt, a minced shallot and some chopped parsley.
|
5. Grease a deep basin and line with suet crust pastry, fill with the above ingredients, add a little water and cover with more pastry.

6. Cover with a floured cloth or several layers of greaseproof paper and boil or steam for about 3 hours.
|
7. Make some strong beef gravy, add a little mushroom ketchup, make a hole in the suet crust top and pour it in.

TIP:

The oysters and kidneys may be omitted, being replaced, if desired, by a little sliced or minced onion.
