Ben Rhydding Pudding (Yorkshire)
What You Need:
  • 1 pound juicy fruit (peach, pineapple, orange, etc.)
  • 6 sponge cakes
  • Cream or custard

  • How To Cook:
    1. Stew 1 pound juicy fruit with sugar to sweeten.

    2. Slice 6 sponge cakes thinly and use them to line a plain mould or basin.

    3. Put in some fruit, then a layer of cake, and so on until the mould is full, finishing with cake.

    4. Place a plate with a weight on top, and leave until cold, then turn out.

    5. Pour some whipped cream or custard over the pudding.
