Cumberland Rum Butter
What You Need:
  • 1 pound butter
  • 3 teaspoons allspice
  • 3 pound soft dark brown sugar
  • 1˝ wineglassful rum
  • 1 glass brandy
  • 3 nutmegs
  • Caster sugar

  • How To Cook:
    1. Melt the butter, but do not allow it to boil.

    2. Place the sugar in a bowl, grate the nutmeg into it and add the allspice.

    3. Stir well, adding the rum and brandy.

    4. Add the melted butter, stirring slowly all the time until the mixture becomes quite stiff.

    5. Put into a china bowl, and when cold sprinkle with caster sugar.

    To Serve: 4 - 6
