Devonshire Squab Pie
What You Need:
  • 6 oz short crust
  • Salt and pepper
  • 1½ pound cooking apples
  • 2 onions
  • 8 small mutton chops

  • How To Cook:
    1. Make the pastry.

    2. Place at the bottom of a pie dish a layer of peeled, cored and sliced apples, then a layer of mutton chops, well-seasoned with salt and pepper.

    3. Then add a layer of apples, next a layer of peeled, sliced onions and another layer of apples; follow with mutton, apples and onions.

    4. Pour on ½ pint water, cover with the pastry crust and bake in a moderately hot oven (425°F) for 10 minutes, then in a moderate oven (375°F) for a further ¾ hour, or until the meat is cooked.
