Durham Bacon Cake
What You Need:
  • ˝ pound lard
  • Cold water to mix
  • 1 pound flour
  • Sliced cold boiled bacon
  • 1 tablespoon baking powder

  • How To Cook:
    1. Rub the lard into the flour till it is as fine as meal, add the baking powder and mix well; add sufficient water to make a stiff paste, and roll it out.

    2. Cover half the pastry with sliced bacon, and then cover with the remaining pastry.

    3. Roll it gently to exclude air and prevent it rising unevenly, prick all over with a fork, pinch the edges together, lay it on a baking sheet and cook in a moderate oven (370°F) till nicely browned.

    4. Serve cut into squares.
