Eccles Cakes
What You Need:
  • ½ pound currants
  • ¼ teaspoon nutmeg
  • 2 oz finely chopped candied peel
  • 4 oz sugar
  • 2 oz butter
  • ½ teaspoon allspice
  • ½ pound puff pastry

  • How To Cook:
    1. Put all the ingredients (except the pastry) into a pan, heat for a few minutes, then set aside to cool.

    2. Roll out the pastry about ¼ in. thick and cut it into rounds.

    3. Place 1 tablespoon of the filling on each and draw up the edges so that they meet; turn the cakes over and press flat with a rolling pin.

    4. Make a small hole in the middle of each, and then lay the cakes on a greased baking tray.

    5. Bake in a hot oven (450°F) for 10-15 minutes, reduce heat and leave until pastry is cooked through, remove from the oven and sprinkle with caster sugar.
