Fruit Batch Cake
(Teisen Gri)
What You Need:
  • 8 oz plain flour
  • 2 oz sugar
  • A pinch of salt
  • 2 oz currants
  • ˝ teaspoon bicarbonate of soda
  • Buttermilk (or milk) to mix
  • 3 oz lard or beef dripping

  • How To Cook:
    1. Sieve the flour, salt and soda into a bowl and currants.

    2. Mix to a fairly soft dough with the milk, then roll out to about ˝ inch in thickness.

    3. Bake on a hot greased griddle on both sides.

    4. Serve hot and well-buttered.
