What You Need: |

|
A few veal chops
Sliced yolks of hardboiled eggs
Mixed spices and chopped herbs
A few truffles or mushrooms
A few slices of lean bacon
Stock
Forcemeat balls
Pastry

How To Cook: |
|
|
1. Trim the meat from the bones and flavor highly with mixed spices and herbs.
|
2. Put in a pie dish with the bacon, forcemeat balls, yolks of eggs and either truffles or mushrooms.
|
3. Moisten with stock, cover with pastry and bake for 1˝ - 2 hours in a moderate oven (350°F).
|
4. Serve with Turnip Purry.
