Herrings Fried In Oatmeal

Herring
Salt and Pepper
Oatmeal

How To Cook: |
|
|
1. Prepare and bone the herrings and dry well by letting them lie in the folds of a cloth for an hour or two.
|
2. Then sprinkle them with pepper and salt and dip each fish into coarse oatmeal, pressing it on to both sides.
|
3. Put a small quantity of fat into a frying pan; when it is smoking hot, put in the herrings and brown them nicely on both sides.
|
4. Drain the fish on paper and serve garnished with parsley and cut lemon, or with small part of maitre d'hotel butter on top.
