Hotch - Potch
What You Need:
  • 1˝ - 2 pound neck of mutton
  • 1 pint fresh peas and/or fresh broad beans
  • 1 small cabbage or cauliflower
  • 6 pints cold water
  • Salt and pepper
  • 6 leeks
  • 1 teaspoon sugar
  • 6 carrots
  • 1 tablespoon chopped parsley
  • 2 small white turnips

  • How To Cook:
    1. Cut the meat into pieces.

    2. Prepare the vegetables and shred or dice as necessary.

    3. Put into a large saucepan with the water and seasoning, but keeping back the peas and beans.

    4. Simmer for at least 1 hour, add the peas and beans and simmer until all the vegetables are cooked.

    5. Check the seasoning and add the sugar and chopped parsley.

    6. Lift out the meat, which is eaten separately, and serve the soup at once.

    To Serve: 2 - 4
