Irish Fruit Loaf
What You Need:
  • 1 pound mixed dried fruit
  • ˝ pound caster sugar
  • 1 cupful warm tea
  • 1 pound flour
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon mixed powdered spice
  • 1 egg
  • 2 oz chopped candied peel or 1 tablespoon marmalade

  • How To Cook:
    1. Put the dried fruit and sugar in a bowl and strain the warm tea over it; leave overnight.

    2. Well-grease bread tin.

    3. Sift the flour, soda and spice into a dry bowl, stir in the soaked fruit and the well-beaten egg and mix well, adding the peel or the marmalade.

    4. Put the mixture into the tin, leveling the surface, and bake in a slow oven (325°F) for 1˝ - 2 hours.

    5. Cool in the tin.

    6. To serve, cut into slices and butter.

    To Make: 1 loaf
