Lancashire Tripe And Onions
What You Need:
  • 2 pound tripe
  • Water
  • 1 pint of milk
  • 4 onions
  • Salt and pepper
  • 2 tablespoon flour

  • How To Cook:
    1. Take dressed tripe and cut it into square pieces, place it in a saucepan, cover with cold water, bring to the boil and throwaway the water.

    2. Add to the tripe 1 pint each of milk and water, sliced onions, salt and pepper to season, and simmer for 3 hours.

    3. Thicken the liquid with flour mixed in a little milk and strained into the pot, re-boil and add extra seasoning if required.

    4. Serve very hot.

    To Serve: 2 - 4
