Laver Sauce
Another favorite Welsh way of serving laver is as a sauce with mutton. This makes an excellent type of item to prepare at table in a chafing-dish.

What You Need:
  • 1 pound laver (see glossary)
  • 2 oz butter
  • Thick gravy from the meat
  • Lemon juice

  • How To Cook:
    1. Laver is mixed with butter, some of the thick gravy from the meat and a little strained lemon juice.

    2. It is then put into a pot and (still according to tradition), stirred with a silver spoon.

    3. The sauce must be served bubbling hot.
