Madeira Cake
What You Need:
  • 8 oz flour
  • A pinch of salt
  • 2 teaspoons baking powder
  • A little grated lemon rind
  • 5 oz caster sugar
  • 5 oz butter or margarine
  • 3 eggs
  • A few drops of lemon essence
  • Milk to mix
  • A slice of citron

  • How To Cook:
    1. Prepare a cake tin.

    2. Sieve the flour, salt and baking powder together, and add the very finely grated lemon rind.

    3. Put the sugar and fat into a basin and work together until they are of a creamy consistency.

    4. Beat in the eggs, adding a little at a time to prevent curdling.

    5. Fold in the dry ingredients, and lastly add a little lemon essence, and milk if required.

    6. Put into the prepared tin, place in a moderate oven (375°F) and bake for 1 - 1¼ hours.

    7. The slice of citron should be put on top of the cake as soon as it is set, not before, otherwise it may sink.
