Newcastle Potted Salmon
What You Need:
  • Salmon
  • Salt
  • Mace
  • Gloves
  • Peppercorns
  • Bay leaves
  • Butter

  • How To Cook:
    1. Scale and wipe the salmon, remove the backbone, and cut the fish to fit into a casserole.

    2. Season with salt, mace and cloves, and add a few peppercorns and 4 bay leaves.

    3. Cover with butter and bake in a moderate oven (350°F).

    4. When done, remove and drain the fish, pound it well, put into pots and when cold, cover with melted butter.
