How To Cook: |

1. Line and grease a baking tray. Sieve both flours and the sugar together into a basin.

2. Press all the ingredients together and mix until of a consistency of short crust pastry.

3. Roll out the dough on floured board until 1/8 inch thick, prick all over with a fork, and then cut into slices.

4. Bake on a greased baking tray in a moderately hot oven (425°F) until set, then reduce the heat and bake slowly until crisp and very slightly colored.

5. Allow to cool on the tray for a short time before removing.

6. The shortbread may also be pressed into a floured shortbread mould, turned out on to a greased baking tray and put into a hot oven (450°F) for 5 minutes; the heat should then be lowered to allow the shortbread to become crisp and golden-brown.
