Beer Soup
(Ollebrod)
What You Need:
  • 1 pint of Pilsner or light beer
  • ˝ pint water
  • ˝ gill cream
  • 2 eggs
  • Sugar

  • How To Cook:
    1. Put beer in a saucepan with ˝ pint water, gill cream, the yolks of eggs and sugar to taste.

    2. Place over a low heat and whisk until very light and frothy.

    3. Remove from the heat just before it reaches boiling point and serve with diced fried bread.

    NOTE:
        This is often served after salted herrings.
