Christmas Biscuits
What You Need:
  • 1 hard-boiled egg yolk
  • 1 raw egg yolk
  • 4 oz sugar
  • ˝ pound flour
  • 4 oz unsalted butter
  • Egg white to glaze
  • A few lumps of sugar

  • How To Cook:
    1. Rub the hard-boiled egg yolk through a sieve into a basin, add the raw yolk and the sugar and stir for about 15 minutes.

    2. Add the flour and butter alternately and mix well, then divide into equal-sized portions.

    3. Form each piece into a long roll as thick as a pencil and make a circle with the ends crossed and sticking out.

    4. Beat the egg white very lightly and crush the lumps of sugar finely.

    5. Dip the biscuits in the egg white, then in the crushed sugar, and bake them in a moderate oven (350°F) till they are a pale golden color.
