Christmas Ham
What You Need:
  • 10 - 12 pound ham
  • 1 egg white
  • 2 bay leaves
  • 2 tablespoons mustard
  • 10 peppercorns
  • 1 tablespoon sugar
  • 5 allspice
  • Breadcrumbs
  • Seasoning
  • Butter for piping

  • How To Cook:
    1. Soak the ham overnight. Put into a pan of cold water; bring to the boil, then throwaway the water.

    2. Fill up the pan again, add the herbs and seasoning and simmer for 3 hours.

    3. Remove the skin, trim and leave to cool for 1 hour.

    4. Brush the ham over with a mixture of egg white, mustard and sugar, and then sprinkle with breadcrumbs.

    5. Bake in a moderate oven (350°F) until golden-brown (about ˝ hour).

    6. When cold, decorate with piped butter.
