How To Cook: |

1. Wash the horseradish, scrape and grate finely; peel and grate the apples, mix the two and at once sprinkle with a few drops of vinegar or lemon juice to prevent their turning brown.

2. Add the salt, sugar and stock.
|
3. Grated carrot may be used instead of apple, in which case the sauce should be made with lemon juice.

NOTE:
|
This condiment is served with boiled meat, particularly ribs of beef, boiled pig's head or boiled smoked meat. If it is served with boiled fish or game, 2 tablespoons thickly whipped cream may be added instead of part of the stock.
