Pancakes With Red - Currant Jelly

What You Need: |

|
4 eggs
4˝ oz plain flour
˝ pint milk
Red-currant jelly or raspberry jam
Salt and sugar
Water
Butter
|

How To Cook: |
|
|
1. Beat eggs well with plain flour, milk and a pinch of salt and sugar; let the mixture stand for a few hours.
|
2. Add 2 - 3 tablespoons water just before using.
|
3. Heat a little butter in an iron frying pan until it smokes slightly and pour in just enough mixture to cover the surface of the pan; if necessary, add a little more butter to the pan when turning the pancake.
|
4. Hand red-currant jelly or raspberry jam separately.
