Peasant Soup
(Supa Taraneasca)
What You Need:
  • 2 pound of any vegetables in season
  • 1 oz sour cream or the yolk of an egg mixed with cream
  • 1 or 2 diced onions
  • 1 tablespoon olive oil or butter
  • Salt and pepper

  • How To Cook:
    1. Cut the vegetables small and cook in the fat for a few moments.

    2. Cover with boiling water and simmer for about an hour.

    3. At the last minute beat in a little sour cream, or the yolk of an egg mixed with the cream.

    4. Add seasoning.

    To Serve: 4 - 6
