Spiced Herrings
What You Need:
  • 2 salted herrings
  • 4 allspice
  • ¼ pint tarragon vinegar
  • 2 bay leaves
  • 2 - 3 tablespoons sugar
  • 1 pickled gherkin
  • ¼ pint tomato juice
  • 1 small onion
  • 4 cloves

  • How To Cook:
    1. Soak the herrings overnight in cold water.

    2. Mix the remaining ingredients to make a marinade and leave to stand for a few hours.

    3. The next day, clean and fillet the herrings, cut the fillets into ½ - inch slices and pour the marinade over them.

    4. Leave until the next day and serve chilled.

    5. Garnish with onion, dill or chives.

    To Serve: 2 - 4
