Veal Roulade With Vegetables

What You Need: |

2 pound shoulder or leg of veal
1 tablespoon green peas
A little anchovy paste
1 small carrot, a piece of celeriac, a piece of parsley root and 1 onion
4 oz butter
1 pickled cucumber, chopped

How To Cook: |
|
|
1. Prepare the meat.
|
2. Parboil the root vegetables and onion in a little salted water, then dice them, add the peas, the anchovy paste beaten with a small piece of butter and the chopped cucumber.
|
3. Beat the veal well, spread with the vegetable mixture and roll up, securing it well.
|
4. Pour some melted butter over it and cook in a moderate oven (350°F) till brown, adding a little water from time to time.
|
5. Cut the roll into slices and serve with mashed potatoes or rice.
