Bacon And Broad Beans
(Judd Mat Gardebo'nen)
What You Need:
  • 1 pound lean bacon
  • 2 oz cooking fat
  • 1¼ pints broad beans
  • 1 clove
  • Salt and pepper
  • 1 bay leaf
  • 2 oz flour
  • Thyme

  • How To Cook:
    1. Put the bacon in sufficient tepid water to cover and bring slowly to the boil.

    2. Wash the beans, pour hot water over them and then bring to the boil.

    3. Add some salt and allow simmering for ½ hour.

    4. Meanwhile make a sauce: brown the flour and fat together and when blended add some water from the bacon pot, together with the clove, spices, herbs and a little pepper.

    5. When the beans are cooked, mix with the sauce and simmer gently for ½ hour.

    6. About 20 minutes before serving, add the bacon, cut in slices or dice, arrange on a hot dish and serve with boiled potatoes.

    7. In place of bacon, pork or pickled pork may be used.
