Beef Carbonades
(Carbonaden Vu Rendflesch)

What You Need: |

|
1˝ pound beef
1 cup vinegar and water, mixed
2 oz cooking fat
Salt
Carrots
1 bay leaf
1 onion
Parsley
2 tablespoons flour
A little white wine (optional)

|
How To Cook: |
|
|
1. Cut the meat in slices and fry lightly.
|
2. Put alternate layers of meat, carrots and onion in a pan, sprinkle with flour and allow to brown slightly.
|
3. Add a very little boiling vinegar and water and then the seasoning and herbs and allow stewing for 2˝ hours.
|
4. Just before serving add a little vinegar, or white wine, and stir gently.
