Belgian Tart
What You Need:
  • 8 oz butter
  • 1 pound flour
  • 2 oz caster sugar
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • A few drops of vanilla essence
  • Apricot or raspberry jam
  • 1 egg
  • Icing sugar

  • How To Cook:
    1. Soften the butter and cream in the sugar.

    2. Beat well, and add the oil and vanilla essence.

    3. Add the beaten egg and stir in the flour, baking powder and salt, sieved together.

    4. Mix all well together, and knead to shortbread like dough.

    5. Grease an 8-inch cake tin.

    6. Using a coarse grater, grate half of the mixture into the tin, covering the bottom completely.

    7. Spread with some slightly warmed jam, and then in turn cover this with the rest of the mixture, grated as before.

    8. Bake in a moderate oven (350°F) for about 1¼ hours.

    9. When the tart is done, sprinkle sieved icing sugar over the top while it is still hot, and turn it out of the tin when cold.
