How To Cook: |

1. Clean the head and boil for 5 hours in salted water.

2. After 2 hours add the stewing steak.
|
3. When the meat is falling from the bones, remove the head, take out bones and chop the meat finely.
|
4. Mix the chopped meat with 3 pints of the cooking liquid, to which has been added the nutmeg, ground finely, cloves, vinegar and gherkins.

5. Put into moulds previously rinsed with cold water and leave in a cool place to set.
|
6. When cold, cover the moulds with heavy white paper and pour a little vinegar on top of this.
|
7. Keep in a cool place, renewing the vinegar from time to time so that the covering paper is always damp.
