Cheese Puffs
(Kaassoesjes)
What You Need:
  • tablespoons water
  • 5 oz butter or margarine
  • A pinch of salt
  • 1 oz flour
  • 1 egg
  • 4 oz Dutch cheese
  • French mustard

  • How To Cook:
    1. Bring the water, 1 oz. of the fat and the salt to the boil.

    2. Add all the flour at once, stir for a short time till the mixture sticks together, and remove from the heat.

    3. Add the egg and beat it into the mixture. (This will take some time.)

    4. Then with 2 teaspoons, form 25 - 30 small balls the size of marbles and put these in a greased baking tin 1 - 2 inches apart.

    5. Bake in a hot oven (450°F) for 10 - 15 minutes. (Do not open the oven during first 10 minutes, or the puffs will go fiat.)

    6. Put the remaining butter or margarine in a warm place for a while, and then add the shredded cheese.

    7. Flavor with French mustard to taste and stir well.

    8. Cut the puffs open at the top and fill with cheese mixture, and close them or top with grated cheese.

    9. Serve as a cocktail savoury or before a meal.
